Coconut Scented Pemberton Butternut Squash Soup

Easily customizable by adding a handful of corn or some herbs, this soup is delicious on a cold winter day. Just North of Whistler is Pemberton Valley which is home to many farms which is where we get our squash. In this recipe we used what we had on hand, Butternut but this would easily work with Spaghetti or even Acorn Squash.
