On the first warm day of the season, Aria Restaurant Manager, Ellwyn Mathews, was inspired by his favorite drink, Scotch, and Fairmont’s custom blend English Breakfast from his home, the Assam region of India. “It was a Friday afternoon in early April, 80 degrees and sunny,” says Mathews. “I had not stocked up on cocktail provisions for the season yet and had to work with what I had in my kitchen.” Mathews suggests making a pot of tea ahead so you are ready at any time.
