Fairmont Royal York 14th In Line Small Batch Dillon's Gin

What do you get when you partner an iconic hotel rooftop herb garden with a renowned master distiller? A wonderfully, whimsical dry gin moment worthy of cheers-ing to!

Fairmont Royal York, with it's long-enduring commitment to sustainability and to the local community, is proud to partner with Niagara-based Dillon's Small Batch Distillers, to create an exclusive gin - a spirit that breathes the rooftop's air, grown from the hotel's most natural roots. Using botanicals sourced from our rooftop garden - pineapple sage, nasturium, and lemon verbena, the gin renders a unique and interesting taste that is savoury and crisp.

The small batch gin is exclusive to our dining venues, EPIC Restaurant & Lounge, Library Bar and In-room dining. However, here are a few of the cocktails crafted by our Tastemakers in honour of this new partnership, that you too can create!


1½ oz Dillon’s Gin
½ oz Green Chartreuse liqueur
¾ oz lime juice
½ oz honey
½ oz lemongrass syrup

Combine all ingredients in a mixing glass and shake. Fill rock glass with one large ice cube and strain into glass.


2 oz Dillon’s Gin
2 oz Soda
½ oz lemon juice
½ oz Ice wine
½ oz honey simple syrup 

Combine all ingredients in a mixing glass and shake. Strain into martini glass and garnish with lemon peel.
